Bakery-Style Gingerbread Cookies

Who doesn't enjoy fancy frosted cookies from those bakery chains?!  I love them too.  However, I love making memories with my family more, so I decided to put my spin on those bakery style cookies and make them at home... with a little help.  If you're following me on Instagram you saw the sweet video of my and my son making these gingerbread cookies together.  It was definitely one of the highlights of my 2022 holiday season.

INGREDIENTS | Gingerbread Cookie
  • 1 cup salted butter (softened)
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 tsp rum extract
  • 4 tablespoons molasses
  • 3 1/3 cup all purpose flour
  • 2 tablespoons corn starch
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 2 Tbsp Yam Spice
  • 2 teaspoons ground ginger

INGREDIENTS | Cream Cheese Frosting 
  • 4 oz cream cheese, softened
  • ¼ cup salted butter, softened (if you do not have salted butter add 1/2 tsp salt)
  • 1 1/4 cup powdered sugar
  • 1 tsp vanilla flavoring

METHOD | Gingerbread Cookies 
  1. Preheat oven to 350 degrees F. 
  2. Combine dry ingredients in a large bowl.
  3. In a separate bowl, or the bowl of a stand mixer, cream together butter and sugars until fluffy.
  4. Add eggs and molasses then beat until well combined.
  5. Add dry ingredients into wet ingredients in thirds, taking care not to over-mix.
  6. Scoop uniform amounts of dough, roll them into balls and flatten OR roll the dough out and use cookie cutters to cut them into shapes.
  7. Place them on a baking sheet 2”-3” apart to allow uniformed baking.
  8. Bake for 10 minutes and immediately remove from baking sheet and place on wire rack to cool.

METHOD| Cream Cheese Frosting 
  1. Cream together butter and cream cheese until smooth.
  2. Add remaining ingredients and beat until well combined and frosting begins to become fluffy. Add 1/4 cup of additional powdered sugar if your mixture does not reach your desired consistency.
  3. Frost cooled cookies with frosting. 
  4. Optional: Using a piping bag and large round tip, begin decorating the tops of your cookies. This can also be completed with an icing spatula or spoon
