Bell Pepper Relish for Salmon Patties (and more) Recipe

First off, do you call these salmon patties, croquettes, cakes, or something else?  I personally call them "salmon patties", but I can dig them being call either of the 3 previously mentioned.  I also call them DELICIOUS, but I've found a way to make them even better. 

I generally pair my salmon patties with hot sauce, Texas Pete to be exact, or a mixture of hot sauce and tartar sauce.  I've developed an awesome bell pepper relish that will make you rethink the way you've eaten these bad boys all your life.  The bell pepper relish adds the right amount of subtle spice and tang these salmon patties need and it only takes 30-40 minutes to complete the relish from start to finish.  The relish lasts in the fridge for at least a week so think of other things you can add a little relish to.  I am thinking hot dogs and burgers.  I'll report back once I give them a whirl!

Red Pepper Relish

Ingredients
1/2 C Red Bell Pepper, Diced
1/4 C Yellow Bell Pepper, Diced
1/4 C Green Bell Pepper, Diced
1/4 C Yellow Onion, Diced
1 tsp Minced Garlic
2T Granulated Sugar
1 Tbsp. Pickling Spice
1/4 tsp Red Pepper Flakes
1/4 C Rice Vinegar or Apple Cider Vinegar
2C Water
Method
  • Add water, vinegar, picking spice, red pepper flakes and sugar to a medium sized sauce pot over medium-high heat.  Simmer for 5-8 minutes.  The water should go from clear to a brownish-yellow color.  After 5 minutes have elapsed, strain the spices from the liquid. 
  • Add the liquid back to the sauce pot and add bell peppers (all colors), onion, and garlic.  Cover with lid and simmer over medium heat for 20-30 minutes, or until peppers have become softened.  Stir frequently and add additional water in 1/4 cup increments as needed. 
  • After 20-30 minutes have elapsed stir the mixture well and set aside.  Allow the mixture to cool before serving.  Mixture is best served warm or at room temperature.  Enjoy!
