Chicken Marsala- restaurant quality at home

I had a late night craving for chicken marsala.  It was cold and rainy, but when cravings call, I answer.  I took a quick trip to the grocery story and got right to it.  Luckily, this recipe is simple to make, with only a few ingredients.  It also comes together quickly.  The marsala wine sauce is so good I could drink it all by itself.  If you have 45 minutes-1 hour I hope you will give this one a try. It does NOT disappoint. 
INGREDIENTS
3 Chicken Breasts (filleted giving you 6 thin pieces) 
1 ½ Cups Corn Starch
½ tsp salt
½ tsp black pepper
1 Tbsp Big L’s Blends Adobo or garlic powder
Olive Oil or Vegetable Oil
8 oz Baby Bella Mushrooms, sliced
5 Cloves Garlic, sliced
4 Tbsp Unsalted Butter
3-4 sprigs fresh thyme (Optional)
2 sprigs rosemary (Optional)
1 Cup Marsala Wine
2 Cups Chicken Stock/Broth
Fresh Parsley, chopped (Optional Garnish) 

METHOD
This process moves quickly, so have all ingredients measured and ready before you begin. 
  1. Mix cornstarch, salt, pepper and Adobo together in a large bowl.
  2. Evenly coat chicken breasts with cornstarch mixture.  Set aside.   
  3. Heat 2-3 Tbsp oil in large heavy bottomed pan over medium heat. 
  4. Place chicken breasts in pan. Depending on the size of the pan, you may need to cook the chicken in several batches, as you do not want to crowd the pan (add additional oil as necessary). Cook 3 minutes per side. 
  5. Remove from pan and place on a paper towel lined plate or rack. 
  6. Using the same pan, add mushrooms.  Add 1-2 Tbsp oil if needed. Cook for 5 minutes, stirring around the halfway mark. 
  7. Add garlic, thyme (optional), rosemary (optional) and butter.  Cook for an additional 5 minutes. 
  8. Add marsala wine and chicken stock. Cook for 10-12 minutes. Liquid will reduce slightly. 
  9. Add chicken to the pan. Cook for 8-10 minutes.  Sauce will begin to thicken.
  10. Garnish with fresh parsley (optional). Remove from heat & enjoy. 

TIP: You usually can find marsala wine on the vinegar aisle. It is a cooking wine rather than a drinking wine.
