Sweet Potato Pancakes/Waffles

Ingredients
1.5 cups all purpose flour (measured correctly)
2T sugar
2 tsp baking soda
1/2 tsp salt
1 1/4 cups buttermilk
2 eggs
1/4 cup vegetable oil
1T vanilla flavoring
1.5 C sweet potatoes baked, cooled & peeled- (about 2 medium sized sweet potatoes)
1 Tbsp Big L's Blends Yam Seasoning

Method
  • Combine your dry ingredients into a large bowl (flour, sugar, baking soda, salt, and Big L's Blends Yam Seasoning) mix well, and set aside. 
  • Place the baked sweet potatoes inside a large bowl.
  • Using a hand or stand mixer with a whisk attachment, blend the sweet potatoes together until smooth.
  • Add buttermilk, eggs, vegetable oil, and vanilla flavoring to the bowl containing the blended sweet potatoes. Mix well.
  • Add half of the dry ingredients into the wet ingredients. Mix well with a spoon or silicone spatula.
  • Add the final half of dry ingredients into the wet ingredients, Mix well- be careful not to over mix.
  • Allow the mixture to rest for 10 minutes before adding them to the waffle maker or skillet/griddle if you're making pancakes.
  • Pancakes will cook for 2-3 minutes on each side on medium heat.  Waffles will cook in 5-7 minutes on medium heat.
